Blade types
Edge ground blade

This type of blade is traight sided and an edge is ground directly onto it.
Taper ground blade

Taper ground blades are as they suggest tapered from the back of the blade to the edge. This gives the finest edge possible and the consistent tapering blade allows it to glide easily through food.
Hollow ground blade

The blade is essentially straight sided with a 'hollow grind' on either side near to the edge to allow for a finer blade edge.
