Correct sharpening method

How often does a knife need sharpening?

Use the tomato test - if your knife can't easily cut through the skin of a tomato - it's time to use a Sharpening Steel. It's important to have your Sharpening Steel in the correct position before beginning the sharpening process. Holding the Sharpening Steel securely in one hand, the pointed end should be planted firmly on a surface. Be careful not to damage the surface you put the steel tip into. The Sharpening Steel should be vertical. You are now ready to begin sharpening your knife. Angling the blade slightly - so that the edge of the blade comes into contact with the Sharpening Steel - use a downward swiping motion to pass the length of your blade along the Steel. Repeat this action on the opposite side of the blade. Continue the alternating swipes of the blade a further five times. Your Sharpening Steel will keep your knives in prime condition if used a little and often.
